Has anybody compiled a complete list of the sick at Rorke's Drift - with a few exceptions they often seem to be given only as numbers in brackets?  Who were all the hospital cases before the battle / who were posted to the main perimeter / who remained in the hospital as walking wounded / who were bed-ridden / what happened to them in the battle?

Have you consulted Lee Stevenson’s The Rorke’s Drift Doctor?

Appendix iv is titled The Hospital Patients I believe it will answer the questions that you pose.
