There is a James Mathison 105467 as stoker on board the HMS Boadicea buts thats the closest I can find

There was no one by the name of Matthewson who served aboard any of the ships of the Royal Navy that participated in the Zulu War.
As for Stoker James Mathison, he was born in 1857 and could not have been involved in the Crimea War or in the China War in 1860, so he could not be the same man.
I believe Matthewson was the victim of his own imagination.
